This Taffy Apple Pizza starts with a crust made from sugar cookie dough rolled out thin and baked to perfection.

Then a sauce made from peanut butter, cream cheese, brown sugar, and vanilla is spread over the cooled crust.
Two diced Granny Smith apples are layered on top, followed by a sprinkle of cinnamon, a handful of chopped peanuts, and a drizzle of warm caramel.
You can cut the pizza into small squares or serve it like pizza by the slice, but either way it will not last long!
Taffy Apple Pizza
1 package (18 ounces) refrigerated sugar cookie dough
1/4 cup creamy peanut butter
1 package (8 ounces) cream cheese, softened
1/2 cup brown sugar
1/2 teaspoon vanilla
2 medium Granny Smith apples, cored and finely diced
1 cup lemon-lime soda
1/4 cup caramel ice cream topping
1/2 cup peanuts, chopped
Preheat oven to 350F. Roll sugar cookie dough into a 12" circle on a baking sheet using a floured rolling pin. Bake 18-20 minutes or until light golden brown. Cool 10 minutes. Carefully loosen cookie from baking sheet and cool completely. Combine peanut butter, cream cheese, sugar, and vanilla in a mixing bowl and stir until smooth. Spread mix over top of cookie. Arrange diced apples over cream cheese mixture. Sprinkle pizza lightly with cinnamon. Heat caramel topping in microwave 15-30 seconds or until warm and drizzle over apples. Sprinkle with chopped peanuts.
*To prevent apples from browning, briefly dip chopped apples into a bowl filled with lemon-lime soda and drain onto a paper towel to remove excess liquid before adding to pizza.
